You don't say if you are using Mac or Windows but on both systems there are keyboard helpers. On Windows, it's called  Character Map (in the AccessoriesSystems Tools Menu) on the Mac it is called KeyCaps (OS9) or Keyboard Viewer (OSX). Basically, it shows all the characters in any typeface and lets you copy them to the clipboard. It aslo tells you what key combination you can press to type the characters.

Typing such characters on Mac is relatively easy, it's usually just a matter of using the ALT key. On Windows, you have to type-in a sequence of keystrokes, something like ALT+0233 for é (e grave). As others, I don't know if you're using Windows or Mac.  I know in Windows you can change the keyboard layout dynamically (from Keyboard in the Control Panel).  FWIW, I have mine set up to switch between US QWERTY and Hungarian 101-key layouts when I press Left Alt+Shift.  This ought to work in any Windows program, including Photoshop.
