Miscellaneous: Alpha and numeric entities both escaped?

How does one add an entitiy to one's post? I've tried to use numeric versions and alpha versions, both to no avail. Without them, many common usage characters are impossible on a standard US/Western Europe keyboard. Where do I find ñ, æ, —, ≠, and the list goes on.
Apropos of nothing whatsoever 
, why is the thread with the newer entry found by clicking "previous"?
